So, remember all that prepping I did on Sunday? I cut up a bunch of fruit and veggies, made hard boiled eggs, and brewed a pitcher of iced tea. I’ve been nibbling and sipping on the finished products ever since, but today i wanted to share this beautiful bowl of fruit I enjoyed as part of my lunch.

It was the most luscious, ripe mango, some sliced kiwi, and a sprinkling of pomegranate arils. Earlier, I made some egg salad with my hard boiled eggs and enjoyed that with a couple Wasa Krisps. This and a glass of iced tea made up my tasty lunch.
It’s been a weird day. Our puppy didn’t want to go back to sleep this morning, so I wound up skipping my regular gym appointment and letting my husband sleep. He hasn’t been feeling well lately, and I knew he needed sleep. Still trying to figure out how to squeeze in some exercise today, but the good news is that most of my assigned writing for the week is done, so I have plenty of time to figure it out. I’ll probably just walk or do some Wii Fit. Another option is to go in tomorrow morning, since that would normally be my day to sleep in a little bit and then work out at home. I guess I’ll figure it out.

I so want to add sunday food prepping to my plan. So smart! it just sets you up for success. I will start with some hard boiled eggs this evening for tomorrow
